Blue Lemon announced plans for expansion in Sandy, Utah, and Gilbert, Arizona.
Blue Lemon is known in Utah for serving high-quality, natural foods in delicious combinations at affordable prices. The new locations are expected to open in early 2014.
“Many people from across Utah and out-of-state have visited our three restaurants and have literally begged us in person, and on Facebook and Twitter, to open restaurants in their communities,” said co-owner Lychelle Day. “We’re so pleased to be able to expand in Utah and into Arizona.”
Husband and wife co-owners, Aaron and Lychelle Day, reported signing a lease for a 5,000 square-foot restaurant that is being built from the ground up at 11372 S. State St., Sandy, Utah, near a Scheels sporting goods store. The restaurant will be similar in size and scope to the chain’s Cottonwood Heights location, but will have its own unique personality.
Plans to open their first out-of-state location in Gilbert, Arizona, include renovating an existing building at 4351 E. Baseline Rd., Suite 108, and building it out to create a chic and casual 4,300 square-foot dining space with an 800 square-foot patio. This location will also include its own twist to the Blue Lemon brand in order to appeal to the upscale lifestyle in Gilbert.
“We’re very excited to bring our unique, fresh food and casual gourmet culture to new neighborhoods in Sandy and Gilbert,” said Blue Lemon President Aaron Day. “But, we also aspire to bring more than just a restaurant to these communities. We value the people we serve, and we’ll reach out to the schools and community organizations in our new neighborhoods and give back in a unique Blue Lemon fashion.”
